Though my experience is limited, I've had good results with the silicone gasket sheets.  With a set of round die punches I can make any size gaskets I might need.

Personally, I use a 0.5 mm thick nitrile sheet for everything related to gas (e.g. regulator membrane) and a 1.0 mm thick kitchen silicone sheet resistant to 250°C for everything related to steam (e.g. cap seals) :
