There is a chemical the check can be dipped into that removes the ink. Perps just dip the check in far enough to remove all but the legit signature.
Too bad you can't dip the perps in the same chemical to erase them!

 

Shows how good these guys are, they removed my signature and re-wrote it completely different looking than mine. Wish I could have gotten a copy to share...
